Tea Buns Recipe

Ingredients

4 cups flour
1 cup sugar
1 cup fine coconut (optional)
4 tsp. baking powder
1 1/2 cups butter
1 1/2 cups raisins (optional)
2 eggs
3/4 cup milk

Directions

Mix all dry ingredients including the butter. Add the eggs and milk, mix together. Preheat oven to 350 C. Roll dough into balls and cook for 15 minutes or until the bottoms are slightly brown.

I'm So in Love...

With the tiniest little human being that has truly melted my heart and has me wrapped around his finger. My beautiful nephew Cameron James, born on April 6 2010 has me so smitten and totally head over heels in love with his every move and wimper. He's just so angelic and perfect, with his cute button nose and precious lips he catches anyone that looks at him in his circle of love. Here's to life, love and laughter ~ it's the little things in life that mean so much!

Weight Watchers Linguine Alfredo Recipe

Ingredients

1 tbsp butter
2 garlic cloves, minced
1 tbsp flour
1 cup fat-free milk
1/4 cup fat-free cream cheese
1/4 cup grated Parmesan cheese
1 cup broccoli florets
1 medium red bell pepper, seeded and cut into 1 inch pieces
1 carrot, thinly sliced
4 cups hot cooked linguine

Directions

In a medium non-stick saucepan over medium low heat, melt the butter. Saute the garlic until fragrant, about 30 seconds. Whisk in the flour, then gradually whisk in the milk; cook, stirring constantly, until slightly thickened, about 2 minutes. Whisk in the cream cheese and Parmesan; cook, stirring until smooth, 1-2 minutes. Remove from heat and cover to keep warm.
Meanwhile, place the broccoli, pepper and carrot in a steamer basket; set in saucepan over 1 inch of boiling water. Cover and steam until tender crisp, about 3 minutes.
In a large bowl, combine the pasta and steamed vegetables. Add the cheese sauce; toss to coat thoroughly. Serve at once.

Life's Ups and Downs - For a Friend

Even though life can take us on a roller coaster ride and have us wondering why it does the things it does, we need to remember that we are each here for a reason and here for each other. Life's definitely not fair all of the time but when life has you down beyond your greatest thoughts please try to find strength in the love of others and believe that miracles do happen. I read somewhere today that "With God's Love Anything's Possible," so please have faith and hopefully you will get through this tough time.

Weight Watchers Pizza Dough Recipe

Ingredients

1 1/2 cups warm water
1 tsp sugar
1 pkg active dry yeast
1 tbsp olive oil
4 1/4 cups all purpose flour
1 1/2 tsp salt

Directions

In a 2 cup measuring jug, combine the water and sugar. Sprinkle in the yeast and let stand until foamy, about 5 minutes. Stir in the oil.
Combine the flour and salt. Scrape the yeast in and mix together. Form a ball once fully mixed.
Spray a large bowl with nonstick spray; put the ball in the bowl and cover lightly with plastic wrap or dish towel. Let dough rise in a warm spot for about an hour or it doubles in size.
Punch down the dough, then cut in half. Refrigerate or freeze in floured zip-close freezer bags or use as directed in recipe.
* If you want a healthier crust, you can substitute 1 1/4 cups of white flour with whole wheat flour. (Adds 2 grams of fibre)
